Time for more honey candied ginger

Can I tell you how much I love ginger? I could probably put ginger in almost anything. It is both sweet and spicy. Sometimes I'm craving something sweet and a couple of pieces of candied ginger seems to do the trick. It is also a great natural medicine. It is touted to help with digestion, fight off infections, and reduce inflammation. Before AIP, I would buy crystallized candied ginger but since it is covered in processed sugar that 's out the window now. Paleo Mom to the rescue! Paleo Mom's honey candied ginger fills this void and it doesn't take much to cure my sweet tooth. Although it is a time consuming recipe, it last a long time and has several uses. I put pieces of it in Phoenix Helix's Eileen Laird's chocolates, used the honey in lemon ginger tea when I had a cold with a terrible cough (it made a wonderful cough suppressant), and used the ginger water to flavor water and in recipes. If you love ginger as much as I do, it is definitely worth the time investment.
